The
aim of Stroud Valley Wines is to produce small
quantities of premium quality wine from the
property. Initially all wines were made by Cassegrain
Wines in Port Macquarie. From 2005, except for
whites, reds have been made on site. Quality
wine is made only from quality fruit. It is
generally accepted that exceptional wine is
80% grapes and 20% winemaker's skill.
About 10 tonnes
of red wine is produced each year in the traditional
way by crushing, destemming, fermenting (with
temperature control) and basket pressing. After
ferment the wine is stored in American or French
oak barrels until bottling. Verdelho is used
for both white table wine and a dessert madeira
style fortified.
